A Morning in the Kitchen

Spend a morning with Camille learning the full lamination process — from poolish to the final fold. You will leave with 8 croissants, a pain au chocolat, and the knowledge to make them again at home. Ingredients, a light lunch, and coffee included.

Learn to make our signature pâte sucrée shell, vanilla crème légère, and assemble a full-sized seasonal tart. We focus on technique over recipe — the goal is that you understand how each component works, so you can adapt it to any fruit.

Sourdough Evening

The Long Ferment

Sanjay takes you through the full sourdough process — starter maintenance, autolyse, folding, shaping, and scoring. You will handle real dough from start to finish and take home an unbaked loaf to prove and bake the following morning.
